Award in Food Safety in Catering level 2

Royal Institute of Public Health/Chartered Institute of Environmental Health

A one day course designed to cover the minimum requirement for anyone involved in, or connected with, the handling of food or beverages. It may also be appropriate for people whose work requires them to enter catering premises. For employees in the catering and hospitality sector, it supersedes the Foundation Certificate in Food Hygiene.

The syllabus includes an introduction to food poisoning and elementary bacteriology, sources of contamination, control of hazards, HACCP systems/SFBB, food storage and temperature control, personal hygiene, basic cleaning and disinfection, food premises design and basic pest control.
